An all time favorite of mine for a quick lunch/brunch...




1. Place bacon in a heavy frying pan. Cook over medium high heat until evenly cooked. Drain on kitchen roll.

2. Toast the bread, then spread each slice with mayonnaise. On one slice of toast, place the sliced chicken, turkey or ham and lettuce.

3. Cover with a slice of toast, then the bacon and tomato. Top with last slice of toast.
